Shoe insoles..?

I just got heavy steel toe work boots and think I should get insoles. When I buy them should I take out the insoles already in the boot? or put them on top?

It depends on how the boots fit you. If your boots fit you exactly, then replace the original insoles. If the boots are a bit big, you can put the new insole under the original insole.
